Lemony Stewed Tomatoes
1 28-oz can stewed tomatoes
1 lemon
Remove long strips of zest from lemon with a vegetable peeler. Add to canned stewed tomatoes; heat through. Remove peel before serving and reserve half of tomatoes for future use.

Broiled Tomatoes over Rice
Reserved tomatoes
2 cups cooked rice (brown or white), hot
1/2 cup seasoned bread crumbs
Spread rice in 8X8″ oven-proof dish or pan, pour reserved tomatoes over rice, spreading to cover, and sprinkle bread crumbs on top.
Broil until bubbly and crumbs are slightly brown, 5-7 minutes.
