Interesting Idea for Single Serve Pies… Make Your Own Lemonade Pie Cookies..
1 egg & Splash water
Pie Crusts (2)
1 jar (10 oz) lemon curd (Make your own here: https://www.budget101.com/make-your-own/myo-lemon-curd-3946.html )
1/4 cup sugarPreheat Oven 350°F.
Mix splash of water & egg in small bowl to make egg wash.Spread lemon curd on 1 of the crusts, leaving 1/2-inch border around edge.
Place second crust on top.
Cut with cookie cutter or pastry cutter. Seal edges with fork dipped in eggwash.Make a little x in center of each cookie.
Brush each cookie with egg wash; sprinkle with sugar. Place on cookie sheet lined with parchment paper.
Bake 12 to 15 minutes or until light golden brown. Cool completely, about 30 minutes, before serving.Attachments:
