3/4 cup milk
1 TBS vinegar
1 TBS Lemon Juice
1 egg
2 TBS melted butter
1/2 ts vanilla extract
1cup flour
2 TBS white sugar
1ts baking powder
1/2ts baking soda
1/2ts salt
1TBS poppy seeds
1TBS lemon zest
Cooking SprayFirst, Stir the milk, vinegar, and lemon juice together in a bowl; let stand 10 minutes to curdle. Whisk in egg, butter, and vanilla extract.
In another bowl, mix together the flour, sugar, baking powder, baking soda, salt, poppy seeds, and lemon zest until combined, Pour the milk mixture into the flour mixture and whisk a few times until the batter is mostly free of lumps.
3. Heat a skillet over medium heat and spray with cooking spray. Pour 1/3 c. batter at a time onto hot griddle (for even pancakes,pour in 1 Spot only!), cook until lightly bubbles, flip. - October 28, 2012 at 11:30 pm #434264
Do you use maple syrup with these pancakes or is there another syrup or topping that enhances these terrific flavors?

I think that I would mix 1/4 cup of powdered sugar with a tsp or 2 of lemon juice and add a 1/2 tsp poppyseeds and drizzle that over the top of the pancakes just before serving.

Those sound good. Are these fluffier pancakes, or flat ones?
