Lemon Pesto Pasta
Pasta:
8-oz penne pasta
4 cups fresh chopped spinach
1 cup oven roasted tomatoes
2 tsp minced garlic
1/4 cup pesto
juice of 1 lemon
1/2 cup feta cheese
Chicken:
4 chicken breasts
juice of 1 lemon
1 tbs adobo seasoning
1 tbs paprika
3 tsp olive oil
Cook pasta according to package directions. While pasta cooks, sauté tomatoes, garlic, pesto and spinach for about 3 minutes on med-high heat. Add Lemon juice and half of the feta cheese to the skillet. Drain pasta and add to the saute until well combined. Let sit on low heat until the chicken is done. Season chicken breasts with adobo, smoke paprika and lemon juice. Pan fry chicken with olive oil in a large skillet over high heat, about 5 minutes. Lower heat to medium-high, cover and let cook for another 5-7 minutes. Serve chicken with prepared lemon pesto pasta.
