Lemon-Blueberry Angel Cake

      This is the supreme short-cut recipe, but a great gift for newly-weds! Give the gift of a mixer, include a gift-certificate of $10, the recipe, and the following ingredients: 3.4-oz pkg instant lemon pudding and an angel food cake from the deli/bakery. You may want to mention that they should make the recipe right away or place the cake in the freezer (they freeze nicely!)!!
      Lemon-Blueberry Angel Cake
      3.4-oz pkg instant lemon pudding
      2 tsp lemon zest
      1 cup cold milk
      8-oz tub frozen whipped topping, thawed
      1 angel food cake, cut horizontally into 3 layers
      1-1/2 cups fresh blueberries, divided
      Beat pudding mix, lemon zest and milk in medium bowl with whisk 2 min. Stir in whipped topping. Refrigerate 5 min or until thickened.
      Stir 1 cup blueberries into pudding mixture. Stack cake layers on plate, spreading pudding mixture between layers and on top of cake.
      Refrigerate 1 hour. Top with remaining blueberries just before serving. Serves 10
