This is my recipe for lemon bars for people that don’t have dietary concerns. The recipe in the ‘Dietary Concerns’ Forum is adapted from the recipe below.
Lemon Bars
2 sticks butter, softened
2 cups all-purpose flour
1/2 cup confectioners sugar
For the Filling:
4 eggs, beaten
2 cups sugar
4 tbs flour
1/4 cup lemon juice
1 tbs lemon peel, finely grated
Heat oven to 325°. Blend the butter, 2 cups flour, and 1/2 cup confectioners’ sugar.
Pat flour and butter mixture into un-greased 13x9x2-inch baking pan. Bake for 18 to 20 min. Remove to a rack while you make the filling.
For the filling, blend eggs, sugar, 4 tbs flour, lemon juice, and lemon peel. Pour over the first layer.
Return to oven and bake at 325° for 20 min. Loosen around edges, cut into bars and sift confectioners’ sugar over the top while the bars are still warm. Makes 16 bars
