Here’s another recipe from a friend:
Leftover Tofurky Sloppy Joes
leftover Tofurky roast (about 1 1/2 cups, diced)
generous dash salt and pepper
1/2 onion, diced
1 tbs olive oil
1/4 cup ketchup
1/4 cup barbecue sauce
1/2 tsp garlic powder
1/2 tsp Dijon mustard
3-4 hamburger buns, lightly toasted
In a large skillet over medium heat, cook the onion and leftover Tofurky in olive oil and season generously with salt and pepper.
Allow to cook, stirring frequently, for three to five minutes, until onions are soft.
Reduce heat to medium low. Allow to cook, stirring occasionally, until desired thickness is reached, about six to eight minutes.
If you have less leftover Tofurky, you may want to add less barbecue sauce and ketchup and adjust the seasonings accordingly. If you don’t have enough leftover Tofurky, you can add some vegetarian baked beans to your sloppy joes.
