Not enough leftovers for the next night? Since you liked the ingredients, why not make a breakfast casserole.
Shred the meat left from dinner
add potatoes or rice
if you had veggies left, chop/mince and mix all ingredients with 4-6 eggs, scrambled (depending on the quantity of your leftovers)
Sprinkle shredded cheese over the top if desired.
Place in casserole or 9 x 11 inch pan and bake until egg is set.
Cut and serve hot, for breakfast. Can also be used as a quiche-type lunch.
