1-2 lbs ground beef 2 large onions-diced 2 (15 oz) can diced tomatoes-undrained 1 can green peas-drained 1 can whole kernel corn-drained 1 can green beans-drained 1 cup pineapple juice-no sugar added 1 (11.5 oz) can V-8 juice-low sodium or comparable equivalent 1 can sliced carrots-drained 1 cup grated cheese
1. Brown ground beef and onions; drain. 2. Add remaining ingredients except cheese.
Stir well. 3. Cover; Cook on low for 4 hours. 4. Turn off and add cheese; serve and enjoy.
Note: I’ve not actually made this but a friend makes this regularly for her family. I’ve tasted what she had one evening and it was pretty tasty, although I prefer fresh veggies if possible. Can also add or subtract veggies to suit your family.
