Here’s a gift that I recently gave to friends for their 38th Anniversary. Needless to say that they have all sorts of Anniversary Gifts! LOL!
They both love potatoes and really liked my recipe for Layered Potato-Duo Bake that I would bring for the occasional pot-luck cook-out. So I placed a gift certificate for the cost of the products and a recipe card in small box wrapped in paper, tied up with nice bow. They were tickled about the present.
Here’s the recipe that they received and have made twice since I gave it to them!
Layered Potato-Duo Bake
1 lb Yukon gold potatoes (about 4), peeled, cut into 1/8-inch-thick slices, divided
1 large onion, cut lengthwise in half, then crosswise into thin slices
3 tbs flour, divided
1-1/2 cups shredded Italian five cheese, divided
1 tbs cream cheese
1/3 cup grated Parmesan cheese, divided
1 lb sweet potatoes, peeled, cut into 1/4-inch-thick slices
1 cup milk
Heat oven to 400ºF.
Spread half the Yukon gold potatoes onto bottom of 2-qt casserole sprayed with cooking spray.
Cover with half the onions. Sprinkle with 1 tbs flour, 1/2 cup shredded cheese and 1 tbs Parmesan. Repeat all layers, except use all the sweet potatoes in place of Yukon gold potatoes.
Top with remaining Yukon potatoes and flour.
Pour milk over all ingredients. Cover.
Bake 50 min. Top with remaining cheese, bake uncovered, 15 min.
or until top is golden brown and shredded cheese is melted.
