Lamb Casserole

      Yeah, lamb is pricey, but often times we splurge around the holidays. Since it is so pricey — even if we buy it from the mark-down bin, which is how I buy it, you don’t want to waste any of it and stretch it as far as you can. Here’s one of my favorites:
      Lamb Casserole
      2 cups diced cooked lamb
      2 tbs butter
      1/2 cup chopped onion
      4 oz sliced mushrooms
      1 1/2 cups cooked rice
      2 14.5 oz cans tomatoes
      1 1/2 tsp salt
      1/4 tsp pepper
      1/2 tsp curry powder
      2 to 4 tbs grated Parmesan cheese or shredded Cheddar or other cheese on hand
      Cook onion in butter until tender. Add mushrooms and brown lightly. Combine all ingredients except cheese in a greased 2-quart casserole. Top with the cheese. Bake at 350° for 30 minutes, or until hot and bubbly. Serves 4 to 6.
      Note: Other diced meat works just fine if lamb is not your thing.
