      Keto N’oatmeal Cookies are sweet, wholesome, with the texture and flavor of old-fashioned chewy oatmeal cookies, but they are made with omega-rich hemp hearts instead!

      Keto N’Oatmeal Cookies

      yield: 24 SERVINGS
      You’ll Need:
      1 cup super fine almond flour
      1/2 cup hemp hearts
      3/4 cup finely chopped walnuts
      2 tablespoons ground flaxseed
      1 teaspoon xanthan gum
      1/2 teaspoon baking powder
      1/4 teaspoon salt
      1/4 tsp Bakewell Cream (optional)
      2 teaspoons ground cinnamon
      2/3 cup Bochasweet
      1 stick of real butter, softened (4 ounces)
      1 large egg
      1 1/2 teaspoons pure vanilla extract

      1. Pre-heat the oven to 350°F. Line a baking sheet with parchment paper or a Silpat.
      2. Mix the following dry ingredients together in a medium bowl: almond flour, hemp seeds, walnuts, xanthan gum, baking powder, Bakewell cream, salt, and cinnamon. Set aside.
      3. Using an electric hand mixer (in a second bowl), cream together Bochasweet, softened butter, egg, and vanilla.
      4. Mix dry ingredients with wet ingredients. Combine ingredients with a wooden spoon or a hand mixer on low speed until well blended.
      5. Using a cookie-dough scoop, drop cookie dough onto a lined baking sheet. Next, flatten the dough prior to baking as it will not spread on its own. Press down on each dough ball using the bottom of a drinking glass until dough is 2-3 inches in diameter (about 1/2 inch thick).
      6. Bake for 14 minutes, or until edges begin to brown. Baking times are based on type of sweetener you chose to use, see below for more info.
      7. Remove from oven and cool completely before enjoying, else the cookies may crumble apart.

      Spacing & Baking Directions for Other Keto Sweeteners:

      If you opt to use a different keto sweetener, the spacing of the dough will be different when you bake.


      Allulose spreads considerably, so leave a minimum of 3 inches between dropped cookie dough. This sweetener creates a chewy cookie.


      As erythritol will not spread by itself, you must flatten the dough before baking, just as you would when using Bochasweet. Also, using this type of sweetener will result in a crunchier cookie, rather than a chewy cookie.

      Baking time for Bocksweet: Bake for 14 minutes, or until edges begin to brown.
      Baking time for allulose: Bake for 12-15 minutes, until edges start to brown.
      Baking time for erythritol: Bake for 15 minutes.

      How to Store N’oatmeal Cookies

      Both Bochasweet or erythritol cookie store well at room temperature. Allulose based cookies store best when refrigerated.
