🍫 Keto No-Bake Chocolate “Oatmeal” Hemp Cookies (Psyllium & Crunchy Version)
Ingredients (makes ~16 cookies)

½ cup hulled hemp seeds (60 g)

2 tbsp chia seeds (24 g)

2 tbsp psyllium husk flakes (10 g) – mimics oat texture & helps bind

¼ cup chopped pecans or walnuts (30 g) – for chewiness
-
½ cup crushed unsweetened keto cereal (like HighKey or Catalina Crunch) (30 g) – optional but adds crunch
-
¼ cup unsweetened cocoa powder (30 g)
-
½ cup natural peanut butter (120 g)
-
3 tbsp butter (42 g) – or coconut oil
-
½ cup BochaSweet (50 g, or to taste)
-
2 tbsp heavy cream (30 ml) – optional for silkiness

1 tsp vanilla extract
-
Pinch of salt
Instructions

In a mixing bowl, combine hemp hearts, chia seeds, psyllium flakes, nuts, and crushed keto cereal.

In a saucepan over low heat, melt butter and peanut butter. Stir in cocoa, BochaSweet, and heavy cream until smooth.

Remove from heat, stir in vanilla and salt.

Pour the hot mixture over the dry mix, stirring until well combined.

Drop spoonfuls onto a parchment-lined tray, flatten slightly into cookie shapes.

Refrigerate 30–40 minutes, or freeze 15 minutes, until firm.
