🍫 Keto No-Bake Chocolate “Oatmeal” Hemp Cookies
Ingredients (makes ~16 cookies)

½ cup hulled hemp seeds (60 g)

2 tbsp chia seeds (24 g) – gives oat-like texture & binding

¼ cup chopped pecans or walnuts (30 g) – for chewiness

¼ cup unsweetened cocoa powder (30 g)
-
½ cup natural peanut butter (or almond butter for milder flavor) (120 g)
-
3 tbsp butter (42 g) – for richness (can sub coconut oil if you prefer)
-
½ cup BochaSweet (50 g, or adjust to taste)

2 tbsp heavy cream (30 ml) – optional, makes them silkier like the old-fashioned kind
-
1 tsp vanilla extract
-
Pinch of salt
Instructions

In a mixing bowl, combine hemp hearts, chia seeds, and chopped nuts. Set aside.

In a small saucepan, melt butter and peanut butter over low heat. Stir in cocoa powder, BochaSweet, and heavy cream until smooth and glossy.

Remove from heat and stir in vanilla + salt.

Pour hot mixture over the hemp/nut mix. Stir until fully coated.

Drop spoonfuls onto a parchment-lined tray, flatten slightly into cookie shapes.

Chill in the fridge for 30 minutes (or freezer for 15) until firm.
