This Keto Cajun Jambalaya is the bomb! You cannot tell that it’s riced cauliflower- it tastes like the real thing!
I saved this one in my keto cookbook from a keto group that I follow.
All measurements are approximate because I just put a bunch of stuff in a pan and hoped for the best.

1 package of Cauli Rice
1 Tbsp of the chicken stock
3 Tbsp of the Sofrito,
1 tsp of the Knorr Tomate
1/2 tsp each of the Flavor God Garlic Herb Salt and Chipotle for a little heat.
I cooked it down until the liquid was gone. Once the liquid was gone I added about a pound of shrimp and the blackened chicken (diced).
Y’all, it was AMAZING!! Even my very opposed to cauliflower rice husband said if I made it again he would eat it and my 9 year old son didn’t realize it was cauliflower rice until I told him!!
