Keto Banana Nut Bread has all the flavor of banana bread, without the unwanted carbs and sugar! This makes a mini loaf, 6 thick slices, with just 2.4 net carbs per slice.
You’ll Need
3/4 cup almond flour
1 scoop unflavored or vanilla protein powder or 1/4 cup coconut flour
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 1/4 sticks of unsalted butter, softened
1/4 cup Bocha Sweet or 1/3 c. Allulose
2 eggs
1 1/2 tsp banana extract flavoring
1 tablespoon + 2-1/3 teaspoons
1/4 cup chopped walnuts, dividedPreheat oven to 325 degrees. Spray a mini loaf pan (3″x6″) loaf pan with non-stick cooking spray or line with parchment paper.
In a small bowl, sift together almond flour, protein powder, baking powder, cinnamon and salt. Set aside.
Mix in eggs one at a time, stirring in between until combined. Add in banana extract and sour cream. Mix until combined.
While mixing continuously, slowly add dry ingredients.
Spoon batter into the prepared loaf pan. Combine reserved butter with remaining 2 Tbs of chopped walnuts and spoon over the top of each loaf.
Bake at 325 degrees for 30-35 minutes or until set. Remove from the oven and let cool before serving.
