Kale with Garlic and Pine Nuts
Remove center stem on a bunch of kale and chop remaining leaves into pieces. Cut into 1″ strips. Rinse,leaving
some water in leaves.
Toast a handful of pine nuts in pan until light brown. Set aside.
Sautee 2 or 3 cloves chopped garlic in 1 or 2 Tablespoons olive oil. Add kale to pan, a pinch of salt and add a handful of raisins
(optional and yummy).
Cover and steam for about 5 minutes. Add pine nuts and drizzle with balsamic vinegar.
Kale stays shiny and dark green, but will shrink down quite a lot. Don’t overcook.
