I know you all have seen the ads with the man dressed like the sun. My family, being hearty eaters, wanted to try this item. I did pick up one package(holy macaroni batman, they are HIGH for what you get-but I had a free after rebate form) and decided to try to make my own.
I chop onions and green peppers and freeze in a single layer on a cookie sheet. Then transfer to zippy bags. (These come in so handy for lots of things.)
For the potatoes, I either get a cheap bag of shredded hashbrowns or use up leftover boiled or baked potates.To cook:
First brown your meat of choice and drain off most of the grease. Add in the potatoes and get the them browned a bit before adding the onion & green pepper. After that is all cooked nicely, add some beaten eggs.Keep stirring until the eggs are nearly cooked. Add some shredded cheddar. By the time the cheddar is melty your eggs should be done.
If you want a Mexican flavor, add a little salsa shortly before adding the eggs. This will get rid of a little of the liquidity of the salsa but retain the flavor.
