This is one of my favorite (dirt cheap) recipes. We eat a lot of stir-frys at our house, mostly because they’re cheap, easy and feed lots of people without much effort.
I usually buy packages of frozen stir fry veggies because they’re only a dollar, but when veggies are on sale in the summer or abundant from our little garden we make our own “stir fry veggie packs”. After all, how much does it really cost to cut up a few onions and peppers and sweet pea pods in a bag anyway!
1 tablespoon cooking oil
1 16 ounce package frozen sweet pepper and onion stir-fry vegetables
1 lb of pork, cut into thin strips
2 teaspoons Jamaican jerk seasoning
1/2 cup bottled plum sauce
Soy sauce (optional)
2 cups hot cooked rice or pasta
In a wok or large skillet heat oil over medium-high heat. Add frozen vegetables; cook and stir for 5 to 7 minutes or until vegetables are crisp-tender. Remove vegetables from wok.
Toss pork with jerk seasoning; add to wok.
Add more oil if necessary. Cook and stir for 2 to 5 minutes or until pork is no longer pink.
Add plum sauce to wok; return vegetables. Gently toss to coat; heat through.
Season with Soy sauce (if desired) and Serve over hot steamed rice.
