Prepare this in baggies or serve at home…
Italian Tuna and Bean Salad
15-oz can white beans, drained and rinsed
5-oz can water-packed chunk light tuna, drained and flaked
2 ribs celery, finely chopped
1 shallot, thinly sliced
1/4 cup chopped flat-leaf Italian parsley
3 tbs lemon juice
1 tbs olive oil
salt and pepper to taste
romaine lettuce, crackers, or toast, for serving
Combine the beans, tuna, celery, shallot, parsley, lemon juice, and olive oil in a medium bowl or baggie.
Season to taste with salt and pepper. If using for a camping trip, place in fridge until ready to pack in the cooler.
Serve with large romaine lettuce leaves, crackers, or toast. If using for camping trip, do the same with the lettuce. Serves 4
