This vegetarian dish can be served as is or over rice, noodles, or orzo.
Can also serve with shredded Parmesan cheese on top for added flavor.
Italian Style Chickpeas
1 can (19 oz) chickpeas, rinsed and drained
2 cans (14 oz) diced Italian style tomatoes-drained
1 tsp dried Italian seasoning
1 small onion-diced
1 clove garlic-minced
s & p-to taste
1/2 bell pepper-diced
1 rib celery-diced
1. Combine ingredients in a prepared slow cooker.
2. Cover and cook on low for 6 hours.
3. Before serving, stir mixture and season with salt and pepper-to taste.
The left overs can be warmed up and used in wraps with lettuce and tomato or blended together until smooth and used as a dip.
