Italian Sausage Subs
Prepare in your favorite method, onions, peppers, sauce, etc. and reserve two ‘sub-size’ sausages for the next recipe.Italian Sausage Wraps
2 cooked sausages, sliced 1-inch thick
large flour tortillas (1 per person)
shredded lettuce
tomato slices (2 per person)
shredded cheese — your favorite
1/2 cup salsa
1 tbs oil
left over onions and peppers (that is, if you have any left;-> so it’s optional)
Heat oil in medium-sized skillet and add sausage and salsa. Heat thoroughly while stirring over medium heat, about 10 minutes. Place lettuce, about 1/2 cup on tortilla.i use the hot sausage and add a dash or two of hot sauce:118:

actually, I had been writing a cookbook;-) got the idea a gazillion years ago when I participated in one of those cookbook fundraiser and the editor said that my recipes sounded so good that she tried several. she then suggested that I write a cookbook.
recipes that I gave to family and friends are being sent to me…everyone is searching through files, etc. sooo, it’s in the works, my friend;-) it kinda sucks because I was doing my final editing before sending it off to the publisher;- oh well, I’m sure there’s a reason for everything…

OMG!! I am so glad you were not hurt by the fire. What a shame all of your work was destroyed.

yeah, I wasn’t at home, but I lost one of my furbabies. I lost everything and have been rebuilding my life and home. friends and parents of my students donated clothes, furniture, kitchen stuff, etc.
but i’m grateful for them.
i had everything backed up on discs, but they melted;- now i have discs for me, discs at my sister’s house, discs at a friend’s, and of course two online groups have many of my recipes. that’s helped — searching the archives and doing copy/pastes;-) so slowly, but surely, it will all be assembled again. my dd is even emailing her favorites that she copied before she moved out on her own!lol! i’ll have to remember to make a note in the books about the ones that are ‘family’ favorites!
