the best way to make an ice cream cake is to freeze it inside a cake pan the size you want the cake to be. line the pan with plastic wrap. smooth softened ice cream into the pan and freeze until hard. remove from freezer, add cake or filling and another layer of ice cream, refreeze. remove after frozen, turn over onto cake plate, and ice with a plain buttercream icing or flavor the buttercream. you can also use a whipped cream icing flavored or not. hope this helps.
