done this several times for my son. Ours is different from the store ones
in that our ice cream is on top instead of the bottom. We make the cake
in a 9×13 pan. You have to do this at least a day or two before the party
as it needs to be frozen before putting the ice cream on. You soften the
ice cream just enough to spread it on the cake (softest on the cake top because
if not, it will crumble the top of the cake) and then put it back in the
freezer until hardened. If you don’t like the appearance of the ice
cream top just put chocolate syrup, nuts, whipped cream, etc, on it. Also,
be prepared for serving it – if it’s in a deep-freezer you will
need to take it out to thaw a little earlier. And you can heat the
cutting knife in hot water to make it easier. Hope this helps!
We will be celebrating my son’s 7th birthday this
weekend and he really wants an ice cream cake for it.
