Does anyone have a good chicken salad recipe that doesn’t have any fruit in it?

How about this:
Chicken Salad with Herb Mayonnaise
3 to 4 chicken breast halves, boneless, skin removed
salt and pepper
1/2 to 3/4 cup mayonnaise
1 tsp chopped fresh parsley
2 tsp chopped fresh chives
1 tsp chopped fresh dill weed or about 1/4 teaspoons dried dill weed
1 1/2 tsp chopped fresh oregano or basil, or about 1/2 tsp dried
3 tsp fresh lemon juice
salt and pepper, to taste
Line a baking pan with nonstick foil. Heat oven to 400°.
Arrange chicken on the baking pan and sprinkle with salt and pepper. Bake for about 20 minutes. Turn and continue baking for 15 to 20 minutes longer, or until chicken is thoroughly cooked. Remove from the oven, let cool, and chop.
Combine 1/2 cup of mayonnaise with the herbs and lemon juice. Mix with the chopped chicken and add more mayonnaise, as needed, to taste. Stir in salt and pepper, to taste.
Serve in sandwiches or on lettuce with avocado slices or sliced tomatoes.

2 cups cooked shredded chicken
1 cup chopped celery
1 onion chopped
3 dill pickles chopped
3 hardboiled eggs chopped
¾ miracle whip
Mix chicken, celery, onions, pickles, hardboiled eggs and miracle whip.
Serve as a sandwich or on a bed of lettuce.
This is what I do with my some of my left overs from a roasted chicken. I put the leftovers in the freezer, I chop some of the chicken and shred some of the chicken. This chicken salad is always better the next day.
