      Instant Flax Meal Peanut Butter Cereal (for one person!)
      1/4 C flax seed meal
      1/2 C boiling water
      2 tbs peanut butter
      1/4 tsp cinnamon
      Note that a half recipe would be 2 tbs flax meal, 1/4 C water, and 1 tbs peanut butter. (And this would be if you were having something in addition to a hot cereal for breakfast;-})
      Pour boiling water over flax seed meal and stir well.
      Stir in peanut butter and cinnamon.
      Let thicken for 1 to 2 minutes. Eat.
      Note: If you are accustomed to eating flax seed, cool…if not, be prepared for what some call a slimy texture.

      But don’t despair if you are trying to increase fiber, reduce carbs, etc., because if you chop up an apple and mix it in the texture changes and it’s more like oatmeal — just heat it for a few minutes after adding the apple.
      My dd gave me the task of developing a breakfast cereal using flax seed meal (hey! she bought it, i didn’t!!) a month or so ago. this is what i came up with that was acceptable…i only like it with the apple added ingiggle smileythe dogs, cats, chickens, and composte bucket enjoyed the benefits of my rejections!

      I have ‘milled flax seed’ that I mistakenly bought for flax seed…will that work in this recipe?

      Sorry, somehow I missed seeing your post;- You would be better off using it to make bread or crackers. Or you could try tossing them into the blender to grind to meal. The whole seed wouldn’t make ‘instant’ cerealgiggle smiley

      The milled flax seed is actually ground up a bit, but not to the texture of meal.
      I’ve never made crackers and I’ve never used it in bread recipes, but it sounds I may try.
      Do you have a recipe using it for crackers? If so, I would love to see it!!
