Does anyone have any Indian dish recipes? I would like to try my hand at a
simple Indian dish something curry like. I cant find anything online.See, we love Thai food and we used to go to this Thai place everymonth or so
because we craved the Panang Beef and Panang Tofu, so I decided to make it
myself and it comes out just as good as the Thai restaurant does. I do
chicken for my husband and tofu for me. With the tofu I add 1/2 cup of
veggie broth to give it more flavor or it doesnt turn out very good. Also I
dont add red peppers. The panang curry paste can be found at the asian
market as can the fish sauce and coconut milk. I usually use regular rice,
although it is nicer with the jamine rice. Make sure the curry paste and
the fish sauce are put in the fridge after opening. My husband swears he
could eat this all week and never be sick of it. Kathy
Chicken Panang Curry Ingredients:
Boneless chicken breast* ¾ pound
Panang Curry Paste 1½ -2 tablespoons
Sweet basil leaves 10-15 leaves
Coconut milk 1 can (13.5 FL.)
Fish sauce 2-3 teaspoons
Sugar 2-3½ teaspoons
Red Chili peppers (cut in half lengthwise) 5-7
Hot steamed Jasmine rice
Method: Cut chicken into thinly 1½-inch strips. In a saucepan, heat ½ cup
of coconut milk and panang curry paste on high heat, until curry paste
bubbles. Add chicken, 2 teaspoons of fish sauce and 2 teaspoons of sugar;
stir continually and cook for about 5 minutes. Then, add ½ cup of coconut
milk, 1 teaspoon of fish sauce, 1½ teaspoons of sugar and 10 sweet basil
leaves; stir occasionally until chicken is cooked. Garnish with red chili
peppers and 5 basil leaves. Serve immediately. Accompany with hot steamed
Jasmine rice. Can be substituted by boneless and skinless pork or chicken.
