I don’t have a recipe per se, I tend to cook just by throwing stuff together. White rice is so versatile, pretty much add a protein, a veggie and a sauce and you can make it stir fry style, casserole style or just all plopped in a bowl. One of my most favorite meals is rice and beans. I soften some onion and green pepper in some oil, add a large can (or homemade if available) tomato sauce, 2 cans (or cooked from dried) kidney beans and a generous amount of taco seasoning. I cook it slowly over low heat and serve over white rice, sounds boring but it’s really good. Tightwad gazette has a “create a casserole” recipe that goes like this:
1 cup “main ingredient”
1 cup second ingredient
1-2 cups starchy ingredients
1/4 cup “goodie”
Main ingredient suggestions:
Tuna, chicken, turkey, ham, seafood
celery, mushrooms, peas, chopped egg
potatoes, noodles rice
cream sauce, sour cream, cream soup
pimiento, olive, nuts, water chestnuts
potato chips, corn chips, bread crumbs
Obviously this can be made as healthy or as junky as your used to cooking.
