The easiest way to clean cast iron pans without affecting the pans seasoning (thereby causing you to have to RESeason the pan!!) is to dump about 3 Tbs of coarse salt into the pan and scrub gently with a soft dampened sponge. salt acts as a natural abrasive to remove any stuck bits of food and will also absorb any oil that may go rancid.
lightly rinse and wipe dry.
