if you ever run short of baking powder for a recipe, it is very easy
to make your own. baking powder is simply a mixture of baking soda
(an alkaline base) and cream of tartar (an acid). the two react
when moisture is added to form carbon dioxide gas which causes the
leavening effect in baked goods.
(baking soda and yeast form the
same gas but in different ways.)
baking powder is simply a ratio of 2 parts acid to one part
alkaline.
You can easily make your own by combining 1/4 cup cream of tartar and
2 tablespoons baking soda. Sift together 2-3 times until well mixed.
If you want less baking powder, use 2 tablespoons cream of tartar and
1 tablespoon baking soda. (or any proportion of 2:1)
It is important that this be stored in an airtight jar. Commercially
made baking powder also has a little corstarch added to it to absorb
any moisture from the humid air (rainy days, etc.) as this moisture
can start the powder reacting in the can.
Depending on the cost of the ingredients, it might be cheaper to mix
up your own baking powder when needed rather than buy it or have it
lose potency after a time.
