I don’t know where my Mom got this recipe, but it’s very easy and can be doubled without any problem.. In fact, I double it every time I make it but don’t double the meat (and it still has plenty of meat)
1 pound lean ground beef (I halve this) 1 cup elbow macaroni 1 cup water 1 can diced tomatoes (I get the ones already seasoned with basil and oregano, etc.)
Brown beef well. Drain excess fat if necessary Add macaroni noodles (uncooked) and water and diced tomatoes. Bring to a boil and simmer (covered) for 15 minutes or until pasta is tender. It does require some attention – fairly frequent stirring – so it doesn’t stick to the pot. Everyone I’ve ever served this to loved it.
