2 tablespoons butter 1 tablespoon vegetable oil 4 medium potatoes, peeled and thinly sliced 1 small onion, thinly sliced Salt and ground black pepper 1 tablespoon chopped fresh parsley( Optional)
In large heavy skillet, heat half of the butter and oil over medium heat. Add potatoes and onions, uncovered, loosening with spatula frequently, until potatoes are tender and well browned-about 20 minutes. Add additional butter and oil as needed. To serve, transfer potatoes to serving bowl; season with salt and pepper and sprinkle with chopped parsley if desired.
