      Hoe cakes are a traditional Southern cornmeal pancake. They were originally cooked on the blade of a hoe over an open fire.

      2 cups cornmeal
      1 tsp. salt
      2 tbsp. oil
      1 cup boiling water
      1 cup cold waterMix 2 cups cornmeal, 1 teaspoon salt, and 2 tablespoons oil.

      Add 1 cup boiling water, stir well.
      Thin as needed with cold water to pouring consistency.
      Drop batter on a hot greased griddle.
      Turn to brown on both sides.
      Serve hot and crisp.
