Herb Potato Salad
Servings: 61 lb new red potatoes
1/2 cup sliced radishes (optional)Dressing:
3 Tbsp plain, nonfat yogurt
1 Tbsp reduced calories mayonnaise
1-1/2 tsp Dijon mustard
1/2 tsp garlic
1/2 tsp dried basil
1/4 tsp dried thyme
1/4 tsp onion powder
1/4 tsp salt (optional)Scrub potatoes & cube. Place in medium saucepan and cover with water. Bring to a boil.
Cover, reduce heat and simmer 12 minutes or until potatoes are done. Drain. Mix dressing ingredients and combine hot potatoes, dressing and radishes.
Serve hot or cold.Nutritional Information (Per Serving)

Protein: 2 g
Sodium: 60 mg
Fat: 1 g

This looks great! Is it similar to sour cream potato salad? That is our favorite kind to make.

In addition to the red potatoes, the other veggies I add are:
1/2C. chopped celery
1/4C. chopped onion, (green onion if possible)
1/2C.chopped green bell pepper,
1/2C. low fat sour cream
1/4-1/2 C. fat free Ranch dressing ( or you can use the dry packet, which is actually even better, but if you do …make sure you compensate for the sauce ingred, but putting extra sour cream, or even, fat free mayo)
1/2C chopped black olives
a wee bit of salt, and black pepper
1/2 Tsp. dried dill
Thats about it..
