      Does anyone have any good Chinese food recipes? I am going to a pot luck on Monday with a Chinese food theme and have no idea what to bring.

      Yao Guo Jiding (Cashew Chicken)
      or
      Gong Bao Jiding (Peanut Chicken)

      This recipe was given to me by a friend of mine who lives in China! 🙂

      A – Marinade:
      2 tsp soy sauce
      2 tsp red wine or cooking wine
      1 tsp corn starch
      1/4 tsp salt
      1 lb chicken, diced

      B – 1/2 cup cashews (or peanuts)
      3 Tbs oil

      C – 1 carrot, diced
      1 red pepper, diced

      D – 2-3 dried chiles, cut into small pieces
      2-3 cloves garlic, minced
      a little sliced ginger

      E – 3 scallions, diced

      Marinate chicken in the “A” ingredients for at least 1/2 hour. Stir fry the nuts in hot oil for several minutes, until lightly browned, then remove from oil. Stir fry carrots in the oil for about 5 minutes, until tender, then remove them from the skillet. Stir fry the “D” ingredients for 20-30 seconds to release their aroma. Then, add chicken & stir fry for several more minutes, until chicken is brown & cooked through. Add all other (cooked & raw) ingredients. Stir fry another minute, then serve.

      Hope this helps! 🙂 For an “authentic chinese meal,” this really doesn’t have many ingredients that you wouldn’t normally find in the pantry or fridge. 🙂

      I just take the baby ribs….Brown them in hot oil…cover and cook for half an hour or so (add water if needed)…Drain and add a bottle of sweet and sour or honey garlic sauce.
      You can put this in your crock pot to keep warm or reheat before serving. I even like the leftovers cold.
