I’ve tried the Dirty Rice and the Hamburger Rice Skillet and thought
they were good. I’ve also tried a variation of the Homestyle Lentils
and Rice and thought it was fabulous. The lentil-rice recipe that I
actually tried is the one from the Tightwad Gazette II. I was
surprised that my kids actually liked it even though they’re
lentil-haters. Here’s the recipe:
Lentil-Rice Casserole
from The Tightwad Gazette II by Amy Dacycyzn
3 cups chicken broth, or use water and 1 tablespoon vegetable
seasoning
3/4 cup lentils, uncooked
3/4 cup brown rice, uncooked
3/4 cup chopped fresh onion
1/2 teaspoon sweet basil
1/4 teaspoon oregano
1/4 teaspoon thyme
1/4 teaspoon garlic powder
Blend all together in a casserole dish. Bake, uncovered, for 1 1/2
hours at 300 degrees. During the last 20 minutes, you may top with 1/2
cup grated cheddar cheese, if desired.
My kids liked it with the chicken broth and cheddar cheese. I highly
recommend the Tightwad Gazette books by Amy Dacycyzn. You can usually
find them on amazon.com. You may also be able to find them on
half.com, ebay or other used book sites.
