As everyone knows, I am not fan of processed foods, but one of my friends who loves Idahoan Mashed Potatoes adapted my recipe to make this and it was good! The only difference between his recipe and mine is that I make a pastry crust (top and bottom) and he used instant potatoes on top! LOL!
Hearty and Rich Beef Pot Pie
1 pkg Idahoan mashed potatoes
3 tbs butter
3 tbs flour
2 cup milk
1/2 tsp salt
1/2 tsp pepper
1 1/2 cup cooked ground beef
1 refrigerated pie crust
1 cup frozen peas and carrots medley
diced yellow onion
Cooked the mashed potatoes as directed, and preheat your oven to 350 degrees.
In a saucepan over medium heat, melt the butter, then stir in the flour until smooth.
Add the milk slowly, stirring continuously, and bring to a boil. Cook until the mixture begins to thicken. Season with the salt and pepper, then stir in the ground beef.
Put the pie crust into a round baking dish, then pour in the beef mixture.
Bake for 20 minutes, then top with the mashed potatoes and bake for another 20 minutes.
