Healthy Salad
2 cups leaf lettuce1/4 cup raw green beans
1/4 cup snap peas
1/4 cup chopped tomato
1/4 cup sliced carrots
1/4 cup apple slices
1/4 cup blueberries
1/4 cup cooked chicken breast, chopped
1 hard boiled egg, chopped
1 oz mozzarella cheese, shredded
1/8 cup walnut pieces
juice from 1 lemon and lime
salt and pepper to taste
Assemble all ingredients except lemon and lime juices, and salt and pepper. Toss well and top with lemon and lime juice, then salt and pepper to taste. Makes a dinner salad for two or a side salad for four.
