This is more like healthy apple pie for one.
1/2 teaspoon sugar
Pinch of ground cinnamon
1 egg roll wrapper (6 1/2-inch square, from 16-oz package)
1/2 cup chopped apple
1 container (5.3 oz) Yoplait® Greek 100 apple pie yogurtPlace the Egg roll wrapper on a small piece of parchment paper, mist it with olive oil or cooking spray. Fold the wrapper in half. Using the foil lid of the yogurt as a size template, cut out a circle from the doubled egg roll wrapper and then cut the round wrapper into strips.
Weave the strips into a lattice pattern. Spray the strips again with a mister or cooking spray, then sprinkle liberally with cinnamon and sugar.
Microwave (uncovered) at 50% power for 30 seconds. Add an addition 15 seconds, repeat as needed until it’s cooked through. Let it cool about 3 minutes.
While it’s cooling mix the chopped apple pieces into the yogurt, slide the “pie crust” on top of the yogurt and enjoy your Healthy Apple Pie.
