Harvest Kale Salad
2 cups leftover cooked vegetables — squash, corn, peas, etc. (it can be a mixture of any veggies that you have leftover to make at least 2 cups)
8 cups loosely packed kale leaves
1/2 cup ranch dressing
1/4 cup slivered almonds
Spoon leftove vegetables into large bowl. Add kale. Mix lightly.
Drizzle with dressing. Top with nuts. Serves 6
