This is for my diabetic friends. It’s a complete single serving breakfast recipe, so multiply for what you need;-D Ham, Tomato, and Cheese Omelet Wrap 1-6″ whole wheat flour tortilla 1/3 cup cooked brown rice 1/4 cup cooked egg substitute 1 oz diced and cooked ham 1 oz diced and drained tomato 1 oz low-fat cheddar cheese 8 oz skim milk Cook rice and set aside. Pour egg substitute in a skillet on a medium heat.
Crumble ham, tomato and cheese into the egg while it is cooking. Fill tortilla with rice and egg mixture. Roll into a wrap and serve with skim milk.
