I’m not a fan of using purchased mixes, but it can be tough when trying to prepare something when there’s just the two of you. Sooo ever so often I will experiment…after all I am cooking for a single! LOL! Half a Cake 1-3/4 cups mix from 18-ounce box of cake mix 2/3 cup liquid 1/4 cup oil 1 egg Preheat oven to 350 degrees F.
Spray an 8″ square or round cake pan with nonstick baking spray containing flour and set aside. In medium bowl, combine cake mix, liquid, oil, and egg. Mix until combined, then beat for 1 minute at medium speed.
Pour into pan. Bake for 30-40 minutes or until toothpick inserted in center comes out clean. Let cool completely, then frost or dust with powdered sugar.
The cans of ready-to-spread frosting really are enough to cover a single-layer cake…not really enough to give a two-layer cake the frosting that it deserves! LOL!
