ParticipantGrilled Tuna Melt with Cucumber-Onion Relish
1 7-oz can (or pkg) chunk light tuna in water, flaked
1/4 cup mayonnaise
1/2 cup finely chopped seeded cucumber
2 tbs finely chopped red onion
1 tbs chopped fresh parsley (Italian style is really good)
1 tsp grated lemon peel
1/4 tsp salt
2 tbs butter, softened
4 thick slices Italian (or Vienna or artisan) bread
4 slices sharp chaddar cheese
Combine tuna and mayonnaise in smallo bowl. Combine cucumber, onion, parsley, lemon peel and salt in another small bowl. Butter 1 side of each bread slice. Place 2 bread slices, butter-side down on work surface. Top each with 1 slice cheese, tuna, cucumber relish, 1 slice cheese and remaining bread, butter-side up. Heat large nonstick skillet or griddle over medium heat until hot. Cook sandwiches 5 to 6 minutes or until golden brown and cheese is melted, turning once. Makes 2 sandwiches = about 760 calories
