Grilled Chicken Breasts
4 boneless, skinless chicken breasts
For the Marinade:
1/2 cup soy sauce
3 garlic cloves, peeled and crushed
1/4 cup seasoned rice wine vinegar
2 tbs honey
1 tbs fresh ginger root, peeled and grated
4 green onions, chopped
2 tbs sesame oil
1 tsp toasted sesame seeds
To make the marinade, in a large plastic ziplock bag, combine the soy sauce, garlic, vinegar, honey, ginger, onions, sesame oil, and sesame seeds.
Add the chicken breasts, squeeze any excess air out of the bag and seal tightly. Transfer the bag to the refrigerator for 30 to 60 min, and remove it from the fridge 20 min before ready to start cooking.
Prepare a grill or grill pan by spraying with a bit of non-stick cooking spray. Heat to high.
Remove chicken from the marinade. Grill 6 min per side, until tender and fully cooked. Serve with salad or cut the cooked chicken into strips and serve over salad. Serves 4
