We have a tendency to go camping multiple times throughout the year and this is a recipe that I make for my wife who incidentally loves 2 things- pineapple and chocolate.
get the grill good and hot. cut a fresh pineapple into nice thick slices. we actually use a pineapple slicer, it makes it easier.
grill pineapple slices just until you get good grill marks.
place pineapple on a piece of wax paper & put them someplace cool.
melt some chocolate chips and add a pinch of cayenne pepper. (we melt ours in a couple tin coffee cans over the campfire, fill the bottom can with water and the top can with chocolate!)
alternatively, if you’re home you could use a double boiler.
melt until chocolate becomes liquid and dip pineapples in chocolate mix.
add a pinch of sea salt to chocolate covered pineapple.
place back in cooler to allow the chocolate to set. usually around valentines day, it’s cool enough outside so that a cooler isn’t really necessary. grilling the pineapple really brings out the flavor and adding the chocolate just makes it divine!
