Grilled Chicken and Tomato Skewers
1/4 cup fresh parsley leaves
1/4 cup fresh cilantro leaves
1 tbs oregano leaves, or dried oregano
2 cloves fresh garlic
1 tbs olive oil
1 tbs red wine vinegar
1 tbs water
½ tsp freshly ground black pepper
1/2 tsp crushed red pepper flakes
Juice from 1/2 lime
1 boneless, skinless chicken breast
1/2 pint cherry tomatoesOlive oil spray
Cut chicken breast into 1-inch cubes. Place in a zip-top bag with half of the chimichurri sauce. Let marinate in the refrigerator for 20 to 30 min. If using wooden skewers, use this time to soak skewers in water.
Thread chicken onto metal or wooden skewers, alternating between chicken cubes and tomatoes.
Serve skewers with remaining chimichurri sauce. Serves 2

My favorite way to grill is with skewers. They’re easy to prepare ahead and are perfect for entertaining friends at a BBQ or for a quick weeknight dinner.
2 tbsp olive oil
2 tbsp balsamic vinegar
½ tsp sea salt
½ tsp black pepper
3 cloves minced garlic
2 tbsp chopped fresh basil
1 lb boneless, skinless chicken breast, cubed
2 cups fresh basil leaves
4 cups cherry tomatoesCombine the olive oil, balsamic vinegar, salt, pepper, garlic and 2 tbsp chopped basil in a medium bowl. Add the chicken and marinate for 10-15 minutes.
Remove the chicken from the marinade, skewer the pieces of chicken, alternating with the cherry tomatoes and basil leaves. Repeat until you use all the ingredients.
