Green Soup any kind of leftover greens — spinach, kale, collard, etc. Chop some onion and carrot. Sauté in a soup pot with a little olive oil. Add some minced garlic. Add water and/or chicken broth. Simmer about 20 minutes, then add leftover cooked greens, small pasta such as ditalini and some frozen corn. Simmer until pasta is cooked. This makes a delicious and healthy ‘Green Soup.’ The more greens, the better. The amounts you use are totally dependent on the the amount of leftover greens. You’ll have to play with it to get what you want. Add water or broth sparingly until you get what you want. Experiment, have fun, and enjoy!
