Greek-Style Wrap
3 tbs red wine vinegar, divided
4 tsp oil, divided
1 tbs minced garlic
1 tsp dried oregano
1/2 tsp salt, divided
3/8 tsp pepper, divided
2 tbs plain Greek yogurt
1/4 tsp Dijon mustard
4 whole wheat pitas
4 romaine lettuce leaves
4 thin red onion slices
1 cucumber, peeled and thinly sliced
1 tomato, cut into 8 slices
Combine the vinegar, 1 tsp oil, garlic, and oregano in a bowl. Heat a skillet over medium-high heat. In another bowl, mix the 1 tbs vinegar, 1 tbs oil, 1/8 tsp salt, 1/8 tsp pepper, yogurt, and mustard until well combined. Spread 1 tbs yogurt mixture on each pita and top with the lettuce, onion, cucumber, and tomato.
