Hi all. I just thought I’d share a recipe I just made for supper, it’s so
good, and I think it’s really nice that it makes a lot with just a few
ingredients. This is called “Good News Rice” and it’s a skillet supper.
1/4 cup oil
soy sauce to taste (sesame oil, optional seasoning)
1 1/2 cups dry rice, cooked
1 can Spam, chopped up into small bits
1/2 or 1 medium onion, chopped
3 large carrots, chopped into small bits
1 can peas, drained
Saute’ meat and carrots in 1/4 cup oil in your largest skillet, until
carrots are almost soft. Then add onions and cook, but onions should NOT be
cooked until transparent. After onions, carrots, and meat are ready, add
rice, and peas, and soy sauce to taste.
This makes a quick, large, supper with rice, veggies, and meat, and is very
