I just finished checking my email and reading the new posts to the
board. Now it’s time to get started on our lunch. It’s going to be a
full day with morning service, then our class and evening service
so thank God for crockpots!!
Here’s a great recipe that we are having this afternoon in fact:
CHICKEN SUPREME
2 slices bacon
6 boneless skinless chicken breast (halves)
1 can cream of chicken soup
1 (4oz) jar sliced mushrooms; drained
2 oz. sliced swiss cheese
In a large skillet, cook bacon until crisp. Remove bacon from
skillet and drain on paper towel. Crumble bacon and set aside in
refrigerator. In bacon drippings in skillet, cook chicken over
medium heat 3 to 5 minutes or until lightly browned; turning only
once. Place chicken in a 4 to 6 quart slow cooker. Top with
mushrooms. In skillet, heat soup and pour over mushrooms and
chicken. Cover and cook on LOW for 4 hours. Top chicken with cheese
slices and sprinkle with bacon. Cover and cook on HIGH for 10-15
minutes or until cheese is melted.
